
So while Kanika still enjoys lovely spring weather in her part of the world, summers are already here in Dubai. Summers here are fierce, sometimes dry and sometimes super humid, so the relative humidity makes it feel even hotter than it actually is.
Summer time also means a lot of cold drinks, desserts and ice cream. As much as I love scoops of Ben and Jerry’s, they also make me extremely guilty when I finish a tub in a single sitting.
But now I’ve found my alternative.
A homemade ice cream that is super simple, healthy and vegan!
In fact, you just need one ingredient- Ripe Bananas! And it works best with over ripe ones that you worry so much about finishing as soon as possible. I discovered this recipe last summer and have been experimenting with it often. More on that later.

A lot of people throw away over ripe bananas thinking that they have rotted. I grew up with that idea as well but was surprised to find chefs in the Netflix show The Mind of A Chef talk about how over ripe bananas taste as if they were caramelised and make the best Banana Cream Pie! I haven’t figured making Banana Cream Pies yet but have started giving these old fellas a bit more respect ever since I discovered how they help make a lovely guilt free dessert.
But it isn’t all bananas. You would also require a powerful food processor that can work frozen foods. The toppings and additives are optional but there are so many possibilities.
To customise this recipe to your tastes, you could add cut fruit of your choice while serving, blend a fruit of your choice, add chopped nuts, a drizzle of honey or maple syrup, cinnamon powder, cacao powder, chocolate syrup, peanut butter, just about anything you like!
Incase you don’t want to get rid of dairy, you could add a splash of milk, but trust me, even if you don’t add it you won’t really miss it. Coconut milk would be nice too, but I haven’t yet tried that.
Here’s how you can make the easiest homemade ice cream there is!
Ingredients
- Ripe Bananas, and these optionals-
- Cinnamon powder (optional)
- Chopped nuts (optional)
- Cut fruits of your choice (optional)
- Cacao powder  (optional)
Whatever you like with your ice cream, really!
Method
Cut ripe bananas into coins and freeze them in an airtight container for at least 2-3 hours or overnight if you’re feeling lazy.

Transfer the frozen banana in a blender and blend.

It will take time, but blend till you find the bananas turning creamy.
You can add the additives at this stage- nuts, mangoes, cacao powder, pitted dates, choco chips, cinnamon, peanut butter, blueberries; I’ve given you enough ideas!
You could have it right away, but I recommend you transfer the blended bananas into an airtight container and free for another 2 hours before you dig into a scoop!
And it’s done!
