An empty bowl/plate is a compliment to the chef. R An empty bowl/plate is a compliment to the chef. Right? Sorry for some bragging, but cooked Baghaar-e-baingan today and polished them off too! For me @kanikasamra this dish, which is commonly written as Bagare Baingan, is extrinsically linked with life in Hyderabad, my parents home there and their cook who introduced us to superb food over almost a decade. I love, love, LOVE this preparation. The nuttiness of peanuts and sesame with fatty toasty coconut and tartness from either tamarind or lime (today) is of course delicious but this warm, sultry gravy that gets one hooked. Some recipes call for a teaspoon of sugar or jaggery. I prefer mine without it and with a dial up on the chilli. So much do I love this combination of masala that I developed the Sunehra Murg recipe by combining this baghaar with a yellow mustard paste, Kasundi, from Bengal. You should try it! It is on the blog. Ideally, for Baghaare Baingan you would use small, Indian eggplants that are slit until the head but not chopped. I had Chinese eggplants and sliced them.
