A recipe that my mom learnt from her Kashmiri friend on their way to work in their trusty chartered bus, it needs only three major ingredients - #saunf, #imli and eggplants of whatever shape or kind. A lagi lipti sabzi that is tart, soupy and #moreish. Make them once and you will soon learn why they are so special. Oh and this one is an extremely versatile and forgiving recipe. I’ve included substitutions too.

I was hesitant to make @kanikasamra’s Thandai co I was hesitant to make @kanikasamra’s Thandai concentrate recipe in its full measure when shooting the video. Kanika assured me that I shouldn’t halve the recipe and that the concentrate will be over before I know it. And that is exactly what happened. I shot the #Thandai Concentrate #video at the beginning of this month and that batch is already over. And #Holi is still 10 days away! Each glass was refreshing, fragrant and cooling and left me wanting more. The best part was that it had just the perfect level of sweetness. So yesterday, I made yet another batch of Thandai Concentrate, hoping I don’t finish it before Holi actually arrives.
