Easy Soya Marinated Chicken Thighs

Weeknight Saviour – A Chicken So Easy Dinner Will Be A Breeze

Sometimes on a weeknight- scratch that- OFTEN- dinner is the last thing I want to worry about. So a recipe that only needs 5 ingredients is the thing to save the day. These soya marinated chicken thighs take only a few minutes to marinate and about 15 minutes to cook. These go very well with white rice or even instant noodles, I can attest to that. In half an hour dinner will be served!

Here is my recipe for Soya Chicken Thighs.

I prefer boneless, skinless chicken thighs for a quick recipe because they are the redder chicken meat and remain juicy after a stir fry.

Total Preparation Time: 30 minutes

Inactive prep: 10-15 minutes; Active cooking: 12-15 minutes

So here’s what you’ll need to serve two for dinner

Approx 1 pound chicken thighs (boneless, skinless),
2-3 garlic cloves,
1 tsp ginger- grated,
1/4 cup low sodium Soya sauce,
1 tbsp olive oil.
Optional seasoning – black pepper/ red chilli flakes
Garnish – chopped cilantro or green onions/scallions

Here’s how to make soya marinated chicken thighs:

Clean and slice chicken thighs into cubes pieces. In a bowl mix soya sauce, chopped garlic and grated ginger. You need marinate the chicken in this mix for only while your pan heats up.

Add oil to a hot pan and transfer chicken to it. Cook for 2-3 minutes on one side, stir and change sides of chicken pieces and then cover and cook on medium heat for about 10 minutes.

If you want you could add chopped scallions and cilantro at this point. That’s it! To serve with white rice, such as basmati, put the rice on the stove even before you start preparing the chicken. Or like me just through some instant noodles in a pot of boiling water. Works just as well. To complete the meal add a side of boiled or sauteed vegetables.
